Some others that aren't so exiciting that could be in the Olympics at any time:
Billiards,
Chess,
Orienteering,
Boules (kind of like Bocce),
Bridge (card game).
These are recognized by the IOC, and, pending a vote, could be added to the Olympic roster of sports.

Yeah, I remember hearing about those a while back -- hopefully the IOC has the good sense not to include them.
Probably won't be long before we're cheering Chris Moneymaker on to the gold medal in No Limit Hold'em.

I think they should add relays where the object being passed is not a baton. Everyone could either have the same object or it could be a random draw of objects a la Monopoly pieces. Some suggestions:
-live ferret
-folding chair
-brick
-Post-it note
-toilet plunger
-cello
-Dutch oven
-straight razor
You could be given a handicap based on what object you drew. For example, the Post-it note would be 0 and the cello could be -30. Hey, it would be more interesting than some of the stuff they have now.
