Fish sauce is also one of the oldest condiments. I'm not sure when it was developed in Asia but in western culture it dates back to the ancient Greeks. There is a guy on youtube who recreates old recipes but his handle escapes me at the moment. I'll post it if I can find it.  Actually come to think of it the very first ketchups made were a version with anchovies in it.

Are you talking about the 18th century guy? HIS name escapes me at the moment. 😛

Drungo, are you going to use wood? Coal? I've seen coal fired ones (like the famous one in NYC, has "1905" set right into the tiles) that literally take 60 seconds to cook a pizza. Like 900o F.

The plan is wood.  With wood I should be able to get the temperature up to 800-850, which is plenty good for a 90-second pizza with a good char.

Plus, my middle school aged boys have some thing about not working in coal mines.  Don't know what that's all about...

I once gave my sister-in-law a bottle of mushroom ketchup for Christmas.  That's only like the 22nd-weirdest thing I've gifted...

Two Thanksgivings ago I made a steak and kidney pie that I thought was really good.  Not easy to source kidneys.  I'm a big fan of meat pies.

A stretch goal of mine is a traditional British eel pie.  But at least in SoMd eels are really hard to source, although I have a name of an eel guy in King George County, just across the Potomac.
