The easy solution is to give Mountcastle Trumbo's playing time. Stewart isn't playing against lefties anyway.

Based off his theoretically superior athleticism I would hope his defensive ceiling in left is at least average (better than Mancini).

Could be, but I think access to the ML coaching and players would do him good, certainly compared to him sitting on the coach at home. I would also expect him to get at least a bit of playing time even if was up.

For me it isn't about evaluation, it's about increasing his knowledge level. Heck he could sit on the bench for the whole of September and be better off for the experience.

You have not shown me a link saying that his defense in left and first is "unplayable". Heck there are hardly any opinions out there on his defense in left and first. What is going on is that you heard his glove wasn't playable at short and third and have managed to convince yourself that means he Billy Rowell out there. How about I give you your first look at Mountcastle in the outfield?
