First organized games ever?  Do these kids have HS baseball or local little league teams or are they only playing pick up ball until they sign?

My understanding is that most of, at least the poorer kids, don't really play organized ball.  They get picked up by these trainers.  There is Little League and local teams, but you have to have money to play that, which most don't.

I don't have a confirmed height, but 6' 1" is probably right. 

He was 5'7" in 2017.
