This provision has been written into contracts in the past; I remember John Lackey's Red Sox contract had it written in that if he missed significant time with a major injury, his team option would switch from whatever amount of millions it was set for and change to the major league minimum. He ended up getting TJ surgery during the contract and had to play 2015 on the minimum. He had one of the best seasons of his career, put up almost 6 WAR. I know I've seen similar provisions in the past as well. I imagine a player would really want to play for a certain team (or be offered oodles of money) to agree to it though.
